Make no mistake. Julia Child is my hero. She spent countless hours dissecting fine French cuisine so that Americans (mostly middle class women) could impress their guests with a beautifully turned out aspic or perfectly executed beurre blanc.
But I’m not Julia. I love France and I love French food, but there is no way I’m going to cook each ingredient in a ratatouille separately so that their individual flavors can be appreciated. No no, Julia. I’m going to find shortcuts that will enable us to bring delicious, simply prepared French food to our table. And I will explore out of the way places all over France to find that je ne sais quoi that makes France France. I invite you to join me for the ride.
